You can keep them. Only harvested crops will be removed if you don't sell them before the testing ends since we don't want people hoarding crops that they harvest now to sell when the reward pool is larger.

We didn't anticipate that we'd be sold out so soon so we don't have anything planned before the opening. Our current priority is to complete the testing and development of the opening part before May 3rd.

The remaining 40,000 packs will be available when the game launches. If everything goes well, that shall be before May ends.
