Fresh goat milk is always warm until you pop it in the refrigerator. Just strain it, warm it so its pasteurized, and it's drinkable. To make cheese, you heat it so it's pastured, then you let it sit and allow the cream to rise, then you add rennet to begin the curdling.
I've raised goats and made goat's milk cheese lots of times. :-)
